Manuka Smoked Sausages  
6-12 fresh sausages (Beef/Lamb/Pork or Chicken)  
3 cups Manuka Smoking Woodchips 

Method 
  1. Soak the Manuka Smoking Woodchips in water for about 30 minutes and drain.  
  2. Place the Manuka Smoking Woodchips over barbecue coals in a foil pack, until smoking.
  3. Barbecue the sausages over the Manuka Smoking Woodchips with a steady heat until cooked.
  4. Keep the lid closed.
  5. If possible, cover the barbecue with a sack or old blanket to stop the smoke escaping – this will increase the flavour.
